Italian Sausage Recipes
As a group these sausages are my favourites. I kind of always thought that Italians loved garlic but it's not in
any of these recipes. Cracked fennel is though--it's got a licorice tang to it and it might be an acquired taste
but it really makes the sausage. Cracked fennel can be a hard spice to buy so just buy whole fennel, wrap it in a
clean tea towel or something like that and pound it with a tenderising hammer. Voila, cracked fennel-by far the
noisiest thing you will do while sausaging making except maybe for the squeal of delight when you sampe what you've
made.
All recipes are for 5 Ibs of ground meat. All are 100 % pork except Knockwurst

Sweet Italian
Simple but excellent recipe
1 tbsp salt
1 cup ice water
1/2 tbsp cracked fennel
1 tsp coarse black pepper
1.5 tsp sugar
Mild Italian
Just a little heat
1 tbsp salt
1 cup ice water
1.5 tsp cracked fennel
1.5 tsp sugar
1.5 tsp crushed chilies
1/2 tsp caraway seed
1.5 tsp coriander
Hot Italian
Just a little more heat --easily tolerable by most people
1 tbsp salt
1 cup of ice water
1.5 tsp cracked fennel
1.5 tsp sugar
1 tbsp crushed chillies
.5 tsp caraway seed
11/2 tsp coriander
Breakfast Sausage
You should use sheep casings for these sausages because they are smaller. Sheep casings are more expensive and a
little harder to find. The green 29mm 32mm size hog casing is a little big but still ok. Depends on how much of a
purist you are. If you don't want to use casings at all, you can make sausage patties.
Probably everybody's favourite kind of sausage--If you want something really special for a holiday weekend or
special breakfast, these sausages will get rave reviews.
English Breakfast
1 tbsp salt
1 cup ice water
1 tsp white pepper
1/2 tsp ginger
1/2 tsp sage
1/2 tsp mace
3 oz bread crumbs (do not skip--lightens up sausage)
Irish Breakfast
This one has garlic which is a little surprising to me but still a great sausage
1 tbsp salt
2 cups of ice water
3 oz bread crumbs
4 eggs lightly beaten
1 oz minced garlic or whole garlic crushed
1 tbsp thyme
1 tbsp basil
1 tbsp rosemary
1 tbsp marjoram
1 tbsp black pepper

Country Sausage
Probaby our best seller because of the name. It's a real good recipe too.
1 cup ice water
1 tbsp salt
2 tsp black pepper
1 tsp marjoram
2 tsp basil
1 tsp thyme
1/4 oz crushed garlic
Chorizo
Great flavour, hotter than hot Italian
3/4 cup ice water
1/4 cup white vinegar
1 tbsp salt
2.5 tsp paprika
2 1/4 tsp cayenne pepper
2 1/4 tsp crushed chillie pepper
1 tbsp coarse black pepper
1/2 tbsp oregano
1 oz fresh chopped or minced garlic
Honey Garlic
If you really like honey and garlic is is amazing. I used to buy big pails of real honey for this one and real
garlic
1 cup of ice water
1 tbsp white vinegar
1 tbsp salt
1 tsp white pepper
1.5 oz garlic
3/4 cup honey
1 tsp cinnamon
Knockwurst
German favourite
3 Ibs lean ground beef
2 Ibs ground pork
1 cup ice water
1 tbsp salt
1 tsp sugar
1 tsp white pepper
1 tsp mace
1/2 tsp coriander
1/4 tsp allspice
1 tbsp paprika
1/2 oz minced or presses garlic

Bratwurst
Mild delicate German Sausage
1 cup ice cold milk
1 tbsp salt
2 eggs lightly beaten
1 1/2 tsp white pepper
1 1/2 tsp mace
1/2 tsp ginger
1 1/2 tsp nutmeg
Russian
Powerful sausage, full of flavour, you must like onion,caraway and dill
Nothing half hearted about this sausage
1 cup ice water
1 tbsp salt
8 oz fresh onions chopped
3/4 oz pressed garlic
1 cup chopped fresh parsely
3 tbsp dill seeds
3 tbsp carraway seeds
1 tbsp black pepper
Louisiana Creole
Macho hot sausage, our hottest
*1 cup ice water if using dried ingredients below
*or 1/2 cup ice water if using fresh ingredients below
1 tbsp salt
2 tsp coarse black pepper
2 tsp sugar
1 tsp allspice
1 tbsp cayenne
1 tbsp crushed chillies
1 oz minced garlic
*1 cup ground fresh onions or 1/4 dried onions
*1 cup chopped fresh parsely or 1/4 cup dried parsely
1 1/2 stalks of celery finely chopped

Simple but real good
1 cup ice water
1 tbsp salt
1 1/2 tbsp paprika
1 1/2 tbsp black pepper
1/4 oz crushed garlic (1/2 tablespoon)
